Strawberry Pasta Salad

With our fruit chicken sliders we also decided to try a Strawberry Pasta Salad

1 3/4 cups bow tie pasta
1 1/2 cup sliced strawberries
3 oz fresh mozzarella (we used pearls)
Handful of basil
1/4 to 1/2 cup balsamic vinaigrette dressing

Cook the pasta according to the directions. Drain and rinse well. In a large bowl, toss pasta, strawberries, cheese and basil together. Add the dressing when almost ready to serve.

When we saw this all mixed together we thought we needed more pasta so we added some more, but then we found that it was too much, so I would stick pretty close to the recipe on the amount of pasta. We just loved all of this together and it went great with our fruit night

Fruit Chicken Sliders

We were a little nervous for these but they turned out great. Since they are the first ones we tried, before we decided to make a blog we don't have pictures. Now I know this sounds a little weird, but you just have to try it.

Fruit Chicken Sliders

8 Skinless Chicken Tenders
4 Kiwifruit
1 tsp Honey
8 Whole-Wheat Cocktail Buns
16 Red Apple Slices
Honey Mustard
Salt and Pepper to Taste

We started by peeling and chopping up the Kiwi into small pieces and then mixing that with the honey. We then fired up the girl and cooked our chicken breasts, about 5 min on each side. You don't want to see any pink, but you still want them to be juicy. We also cut the buns in half and grilled those! Once you have everything prepped you are ready to make your sandwiches. Put some honey mustard on the bottom of the bun. Next add two apple slices, then the chicken and then the Kiwi before putting on the top bun.

I know this sounds weird but it was great! Mom tried it without the bun and it just wasn't the same. The mix of the wheat with the apples and kiwi and the honey mustard was mouth watering.
